<p>在家裡炸排骨是不是一件不容易的事情？要先去採買排骨回來醃製，然後才能下鍋油炸，醃料如果調製不好，醃出來的排骨也不一定又香又好吃，而且整個處理過程結束還要洗很多器材，有個簡單的方式可以讓各位輕鬆在家炸出又香又好吃的排骨，筆者這次就在 momo 購物網上買到這組大成中一排骨，之前有買過大成的中一厚切豬排，相當滿意，這次剛好看到 momo 有在特價，就立刻下單買一組回來吃吃，筆者買的是這組，分享給大家看看。</p>

<p>我們這次買的是家庭組，一箱有20包，每片都是醃漬好的冷凍真空包裝，直接放冷凍庫保存，想吃再拿出來炸簡直超方便，對了，用煎的也可以唷！</p>

<p>這是已經解凍的大成中一排骨，冷凍的不能直接下鍋炸啊！建議要吃之前先放冷藏解凍，不過這樣要好幾個小時才會解凍，我通常都偷吃步，直接泡冷水解凍，馬上就解凍完成。</p>

<p>根據包裝上的介紹，先把油鍋加熱至175度C，然後就把排骨放進去油炸，炸的速度非常快。</p>

<p>筆者這次用小油鍋炸，這樣不用太多油，一次炸一至兩片都可以，但我建議一次炸一片，因為這外層炸的時候會黏，分開炸會比較簡單，而且炸 3~4 分鐘就可以完成，也很省時間。</p>

<p>炸的時候盡量避免讓排骨沉在底下或碰觸鍋邊，因為我發現它會黏，掌握一點小技巧，等一下鍋子會比較容易處理，畢竟我們要懶到底，鍋子越好處理當然越好。</p>

<p>兩片分開炸也只炸了約10分鐘，是不是超有效率呢？剛炸起來的這兩片大成中一排骨真的有夠香。</p>

<p>厚度我覺得很可以，雖然不是那種標榜超厚的排骨，不過筆者認為這樣的厚度剛剛好，配飯很對味，在家裡也能輕鬆做出好吃的排骨飯，而且筆者最愛的是它的調味，有一種獨特的香味，吃起來鹹度也剛剛好，推薦大家可以買這組家庭號放家裡的冷凍庫，隨時可以拿出來炸給家人一起享用，節省採買的時間也節省料理的時間，真是個非常棒的產品，再分享一次購買連結給各位。</p>

<p>雞柳是筆者非常愛的一個雞肉部位，雞柳有著超低脂肪以及豐富蛋白質的優點，還有肉的紋理是一絲絲的特色，只要適當料理就能變出超美味的食物，雞柳可以炸也可以煎，今天就來教各位如何製作這道簡單又好吃的香煎蒜香黑胡椒雞柳，食材準備簡單而且煎起來香味四溢，非常下飯。</p>



<p><strong>食材準備</strong></p>



<p class="has-background" style="background-color:#fcb900a3">新鮮雞柳條、蒜頭、黑胡椒粒、胡椒鹽、食鹽、橄欖油（選用，少許即可）</p>

<p>第一步驟就是把雞柳與所有的醃料全部放在一起，蒜頭切碎，調味料的鹹度各位可以自己調整。</p>

<p>稍微抓一下讓所有雞柳都能均勻沾裹上醃料，大約醃個五分鐘至十分鐘即可準備下鍋。</p>

<p>不鏽鋼平底鍋預熱，加上食用油，大約１８０度左右就能把雞柳下鍋開始煎。</p>

<p>大約煎個幾分鐘後就可以翻面，兩面都煎得有點上色，會散發出很香的蒜香味，不要煎太久，避免雞肉柴掉，大約表層煎焦香，然後還有些彈性就可以準備起鍋，火侯請各位自己控制。</p>

<p>一袋裡面總共有五片，每片蔥油餅都有上下各一張塑膠片，其實就是塑膠袋的材質，這樣的好處是不會每一片都黏在一起，但缺點當然就是使用了許多塑膠，希望可以有比較好的解決方案。</p>

<p>回到我們的主軸，我們要用不鏽鋼平底鍋煎出美味好吃的義美香酥蔥油餅，首先，不鏽鋼平底鍋要先預熱，完全沒水的情況下，加入食用油，記得油不要加太多，因為蔥油餅本身就有油，恰恰好的油才能煎出漂亮的蔥油餅。</p>

<p>把油弄均勻的過程，鍋子可以繼續加熱，這樣待會兒才不會黏鍋，加熱至一百多度即可，千萬不能冒煙，油只要一冒煙就劣化，吃了不健康，煎出來的蔥油餅也會有噁心的油耗味唷！</p>

<p>當油溫足夠且沒有冒煙時，把冷凍的義美香酥蔥油餅直接下鍋，不用解凍就可以煎，放心，然後重點來了，轉小火並蓋上鍋蓋，轉小火的原因是火太大會導致不銹鋼鍋黏鍋，所以剛下鍋時要先轉小火，讓蔥油餅解凍軟化，這個過程很重要，火力太大會讓鍋子溫度過高，跟冷凍的蔥油餅溫差太大，會馬上黏鍋。</p>



<p>再來是蓋上鍋蓋，可以讓蔥油餅上下同時受熱，煎起來的蔥油餅會比較蓬鬆，沒蓋鍋蓋的蔥油餅會煎到乾乾扁扁，口感不佳，所以請記得一定要蓋上鍋蓋。</p>

<p>蓋著鍋蓋，用中火稍微煎一下，我是抓一分鐘左右，看各位的火侯，自己抓適當的時間，不要用太大火就對了，太大火很容易瞬間焦掉就失敗了，我們的目標是表層酥脆，內層保持鬆。</p>

<p>差不多表層煎這樣就可以起鍋，不要煎太焦，以免失去口感，這時候很燙，味道真的是香噴噴的。</p>

<p>表層相當酥脆，薄博一層酥脆層，裡面的則是鬆軟的內層，香氣四溢，吃起來蠻有層次感的，外層咬起來會有酥脆的響聲，內層則是有點軟又有點Q還有點香，由於義美香酥蔥油餅本身就有調味，所以煎起來我通常都直接吃，不用額外加醬料就很好吃。</p>

<p>首先將重點食材，包含韭菜、餛飩、酸菜、高湯都放入鍋中，加水後開始煮滾，這就是我們的酸菜湯頭，我們為了拍照，把韭菜也放進去煮，這樣比較容易變深色，如果你自己要煮，建議韭菜可以最後再放。</p>

<p>前面提到，我們為了拍照，所以把韭菜在一開始就放進去煮，稍微悶煮後，韭菜的顏色就會變成像照片中這樣，不過這樣其實有一個好處，就是韭菜的甜度都熬煮進湯了，其實湯頭會更讚，各位就自己拿捏放韭菜的時間點囉！晚一點放其實也很好，而且韭菜可以維持得比較綠一些。</p>



<p>煮滾的時候打開鍋蓋，其實就可以聞到很濃的客家酸菜湯味道。</p>

<p>我們把白麵與雞蛋用另外一鍋滾水來煮，這樣兩鍋一次進行，時間比較好抓，也比較快完成。</p>

<p>加點水繼續炒，由於翼豆屬於豆類料理，建議要炒到全熟吃比較安全，可以的話，蓋上鍋蓋會更快熟透，如果沒有熟透，中央的地方會很硬，吃起來會以生豆的味道，所以一定要炒熟。</p>



<p>熟了開鍋蓋，加入一點食鹽調味就可以了。</p>

<p>今天的翼豆炒豆干起鍋囉！辣椒的部分純粹是筆者愛吃辣，不加也可以，這道料理吃起來口感很好，有五香豆乾又有爽脆的翼豆，加了辣椒稍微有點辣度，吃起來很下飯，各位也可以自己炒一盤來吃吃看。</p>

<p>蒜香九層塔煎蛋應該算是一倒歷史悠久的傳統料理，除了味道很香也很營養之外，其實作法也相當簡單，今天就來用簡單的介紹，教大家如何做出又香又好吃的蒜香九層塔煎蛋。</p>

<p>這個步驟盡量把蒜頭及九層塔切碎，因為如果沒有切碎，待會兒翻面的時候，但很容易破損，切的夠碎，比較容易跟蛋液融合在一起，煎起來會更完整。</p>

<p>加點水開始打蛋，加水的目的是為了讓煎蛋的過程可以避免燒焦，水也可以讓蛋煎起來更蓬鬆，但水不能加太多，不然煎起來容易塌掉，翻面也會破，這就是水能載舟亦能覆舟的道理啊！以我們用四顆蛋來說，大約用 30~40 cc 的水就夠了，蛋一定要打得很均勻，煎起來才會漂亮。</p>

<p>可以用來煎蛋的鍋子很多種，其中最難用的就是不銹鋼鍋，因為不鏽鋼鍋最容易黏鍋，但是偏偏許多人家中都只採用不銹鋼鍋，其實只要掌握了技巧，不銹鋼鍋也可以不沾，煎出很漂亮的蛋，秘訣就是先將鍋子燒熱，但不能太過熱，不鏽鋼燒過頭有可能會釋放重金屬，所以大約燒到一百多度就可以了，接著再放油，把油預熱，但不能燒到冒煙，因為油一冒煙就劣化，吃了對健康有影響，而且煎出來的蛋會有油耗味。</p>



<p>油加熱到什麼程度比較剛好呢？很簡單，用一滴蛋液測試，滴入鍋中，在油上可以滑動，不會黏鍋的狀態，就可以把整碗蛋液倒入鍋中開始煎，這時候用中火即可，火太大容易燒焦，火太小蛋不會蓬鬆，所以用中火差不多，每個爐具火力不同，這個部分請各位自行抓感覺，記得一定要蓋上鍋蓋。</p>



<p>備註：蓋上鍋蓋可以讓煎蛋產生膨鬆的效果。</p>

<p>大約煎個一分鐘左右，就可以打開鍋蓋翻面，只要掌握了不銹鋼鍋的溫度與油溫，就可以在不過熱的情況下達到完美的不沾效果，以筆者這次的示範來說，翻面算是很成功，這個鍋子的直徑是28公分，給各位參考，煎好的這一面表層酥脆，整個程圓形沒破掉，只有一條小小的裂痕是剛剛不慎用鍋鏟扯到的，這時候香味四溢啊！</p>

<p>因為手上要拿鍋鏟又要弄相機，起鍋的步驟稍微沒弄好，把剛剛漂亮的圓形稍微擠壓到，所以有點皺褶，實在有點可惜，但是自己吃沒關係，這盤蒜香九層塔煎蛋的味道非常香，撒上一些食鹽或胡椒鹽就超級讚，也可以沾點薄鹽醬油吃也很對味。</p>

<p>厚度的部分給各位參考，大約將近一公分左右的厚度，吃起來口感很好，九層塔的香味與蒜頭的香味很完美融合在煎蛋裡，搭配白飯超級適合，很下飯，各位也可以在家裡自己試著做一次看看唷！</p>

<p>豬肉絲有很多種不同的料理方式，也經常用來搭配青菜快炒，我們今天要把豬肉絲先用醬油醃好再下鍋煎炒，這道料理非常簡單好吃，味道夠也很下飯，有這道醬燒豬肉絲，小朋友都可以吃飯吃超快耶！</p>

<p>新鮮的豬肉絲稍微清洗，把血水清洗掉後，加入醬油、蠔油、蒜頭、胡椒粉，稍微醃製入味，你也可以在這個時候加入一些黑胡椒顆粒一起醃，味道也不錯。</p>

<p>因為筆者喜歡吃辣，所以有準備一些小的朝天椒，待會兒要一起加進去快炒，九層塔則是用來提香，如果你手邊沒有九層塔也沒有關係，還是可以繼續做這道料理。</p>

<p>熱鍋後加入食用油，然後把醃好的豬肉絲下鍋快炒一番，這個步驟還不要放水，先把肉絲炒出香味。</p>

<p>炒著炒著，醬燒肉絲的香味就出來了，這時候加入剛剛準備的朝天椒，然後繼續快炒，把辣椒的辣味逼出來，讓肉絲能有更強烈的辣味。</p>

<p>把剛剛準備的新鮮九層塔下鍋，同時加入水，保持大火，馬上快炒一番，這時候香氣四溢。</p>

<p>市面上的鯖魚尺寸不等，以這條380公克正負20公克的重量來說，算是稍微大條的規格，很適合全家人一起享用，如果你家裡一次吃不完這麼大條，其實也可以選擇比較小條一點的，價格會更便宜些。</p>

<p>把整條退冰的挪威鯖魚一夜干取出，鯖魚可能會跟包裝袋貼合在一起，不容易整條拿出來，我的技巧是把水加入真空包裝袋中，鯖魚馬上就會跟袋子分開，整條可以輕鬆滑出來。</p>

<p>你看這條鯖魚非常新鮮，應該是在海上捕撈上船就直接切割包裝的吧！？我猜啦！這樣才能有這麼清澈透明的魚眼睛啊！新鮮度真的非常好，煎起來一定非常好吃。</p>

<p>把魚尾切掉，魚頭切開跟魚身一起下鍋開始煎個幾分鐘，馬上就會吱吱作響，散發出很香的味道囉！</p>

<p>前後不過幾分鐘的時間，只要控制好火侯，很快就煎熟了，這支 de Buyer 法國畢耶平底鐵鍋也真的很好用，以往用不銹鋼鍋很容易黏鍋，改用這支鍋子就幾乎不黏鍋，煎魚變得超輕鬆，煎這樣就差不多可以準備起鍋囉！這時候廚房都是很香的鯖魚香味，很想趕快大吃一口。</p>

<p>筆者把剛剛的魚頭一起放回盤子裡，稍微擺盤一下，其實鯖魚的魚頭沒什麼魚肉，單純只是為了擺盤比較完整而已，如果你沒有要擺盤，魚頭其實可以直接放棄，不用下鍋煎。</p>

<p>大家都知道海茸有著豐富的營養價值，還有便宜的價格，是攝取營養的經濟實惠選擇，豆腐也同樣有著豐富的營養，還是補充鈣質的優質來源，今天就來教大家怎麼將海茸與豆腐一起燉煮出一道適合全家人一起享用的家常菜，這道「海茸燉豆腐」的料理方式非常簡單，算是懶人料理了，成功率也很高。</p>

<p>先將買回來的豆腐切好，無論要切片還是要切塊都可以，我們這次選用的是板豆腐，因為口感比較紮實，如果你喜歡吃比較嫩的豆腐口感，也可以使用嫩豆腐來取代，都相當好吃。</p>

<p>海茸記得要買新鮮的，海茸這種東西只要放隔一天，味道就會有點走味，也許很多人聞不出來，但是筆者的鼻子非常靈敏，一聞就聞得出差異，所以筆者通常都買當天的新鮮海茸來做料理。</p>

<p>海茸很長，記得先切段，長度自己決定即可，捲捲長長的海茸在以前俗稱電話線，不過現代人可能都使用手機比較多，比較少去注意電話線，下次在家裡可以稍微注意一下電話線的外觀，跟海茸真的很像。</p>

<p>將所有的食材及調味料下鍋，除了海茸與豆腐之外，筆者還加入薄鹽醬油、醬油膏、葡萄籽油（可以用一般的食用油代替）以及辣椒，這樣煮滾後吃起來的滋味很棒！接著蓋上鍋蓋煮滾後轉小火燉煮約10分鐘。</p>

<p>鍋蓋打開看一下，這海茸已經燉煮得差不多了，海茸與豆腐都已經入味的差不多，燉久一點的話海茸會更軟，如果想保留多一點海茸的彈性，就不要燉太久，差不多這樣就可以起鍋囉！建議還可以額外加一些九層塔提香，筆者今天沒有準備九層塔，就先這樣起鍋吧！</p>

<p>新鮮的翼豆在清洗之前，要先把頭尾去掉，因為頭尾很硬，很難咬，不好吃，所以通常都會切掉，關於翼豆這種蔬菜，可以參考我們另外一篇＂<a href="https://www.funye.org/%e7%bf%bc%e8%b1%86%e7%82%92%e5%b9%b2%e8%b2%9d%e6%96%99%e7%90%86/" data-type="link" data-id="https://www.funye.org/%e7%bf%bc%e8%b1%86%e7%82%92%e5%b9%b2%e8%b2%9d%e6%96%99%e7%90%86/">翼豆炒干貝</a>＂的介紹，簡單來說，翼豆不是台灣本土的蔬菜，而是非洲及東南亞的原生種，台灣在西元1910年引進栽種，已經有上百年的歷史，在台灣有許多別名，例如楊桃豆、四角豆、香豆、羊角豆、龍豆、翅豆、豆菜…..等，這種蔬菜很營養，含有豐富的鈣質，蠻推薦大家可以買來吃吃看的。</p>

<p>翼豆吃起來的口感爽脆，切成這樣一段一段的比較容易食用，不然整條下鍋真的太難咬了。</p>

<p>我們這次採用的是本草豬，這個品牌的豬肉特色是幾乎沒有豬肉常見的腥味，因為飼養的過程特別講究，大潤發就可以購買，價格比一般的豬肉會稍微高一點點，但肉質真的好很多。</p>

<p>翼豆是營養豐富的蔬菜，吃起來脆脆的，有很多種料理方式，最常見的就是熱炒，可以搭配肉絲、蝦仁、大蒜或是我們今天準備的干貝，料理起來簡單又好吃，而且還可以補鈣，營養好吃，來看看這道料理的製作過程，非常簡單，看完你也可以在家裡輕鬆炒出一盤美味料理。</p>

<p>這次我們選用的是鑫榮水產的小生干貝，這種干貝的大小比較小一點，很適合用來炒菜，價格也很便宜，我是在大賣場購買的，大潤發、家樂福都有賣這種小干貝，使用很方便。</p>

<p>把干貝用清水洗乾淨，新鮮的干貝聞起來味道還不錯，待會兒煎起來應該很香，如果你附近沒有大賣場或全聯這種超市，也可以在網路上購買這種小干貝，筆者這裡推薦佐佐鮮的這款無膨發小干貝。</p>

<p>今天的另一個主角登場，<strong>翼豆</strong>，也稱為四棱豆（學名：Psophocarpus tetragonolobus），楊桃豆、四角豆、香豆、羊角豆、龍豆、翅豆、豆菜&#8230;..等，原產於非洲及東南亞地區，臺灣在1910年引進栽培，可能很多人沒見過這種豆，畢竟市面上不是很常見，大多數的賣場或市場都沒賣，如果你附近的市場有賣，那恭喜你，這種翼豆非常營養，可以買來吃。</p>



<p>翼豆的營養價值很高，富含蛋白質、維生素、多種礦物質、多種氨基酸、脂肪、膳食纖維、維生素E、胡蘿蔔素、鐵、鈣、鋅、磷、鉀，其中鈣質含量非常高，每100公克的翼豆含有440mg的鈣質，可以說是補充鈣質的超級蔬菜，接著我們就繼續來製作今天的翼豆炒干貝這道料理囉！</p>

<p>熱鍋倒油將蒜頭爆香，這個月份的蒜頭已經開始發芽了，但是沒有關係，還是可以用，炒起來還是很香</p>

<p>把剛剛的小干貝下鍋跟蒜頭一起煎一下，味道已經非常香了</p>

<p>接著把剛剛切好的翼豆下鍋快炒，加入食鹽快炒一番，如果你想要更夠味，也可以加入胡椒粉、黑胡椒粒以及些許辣椒，炒起來會更好吃。</p>
